Fruit and Vegetables Harvesting Handling and Storage Book
Packaging in LDPE film or polybutadiene film retained their freshness in storage at 0 ∘C, but packaging with thicker film and subsequent storage at higher temperature there was induced the production of acetaldehyde, ethyl alcohol, and acetic acid, more so from stem tissues than from florets (Chachin et al. 1999).
Mineral powders incorporated into films can be used for broccoli in order to control the O2 –CO2 balance inside the bags (Industrial Material Research 1989, quoted by Abe 1990). Serrano et al. (2006) reported that non-wrapped broccoli lost weight, turned yellow and their stems hardened and there was a rapid decrease in total antioxidant activity, ascorbic acid and total phenolics giving a maximum storage period of only 5 days.
