Weight loss during cooling may also be greatly reduced by wetting warm produce such as leafy vegetables with potable water before it is put into the store. It is preferable to harvest produce early in the morning, when it is coolest, and put it directly into the cool store.
This reduces the load on the refrigeration plant and lowers costs. When it is necessary to harvest produce later in the day in hot, dry weather, it may be practicable to spray some types of produce with potable water, to leave produce overnight in the open to cool by a combination of evaporative cooling and radiation cooling (if the night sky is clear), and place into store the next morning.
